It's Officially Fall!!!

Actually, it was officially fall yesterday. But getting the time to sit down and write a post yesterday was like trying to get oil from a water spout (oh, how I love that song!). Anyway, I am so excited!!! Fall is my favorite season! Everything about it is great...apple picking, leaves, cool weather, sweaters, Halloween, cider, and pumpkin-flavored EVERYTHING!!! In fact, to start the season off right, I made some incredibly yummy Pumpkin bread. Now, before you get all excited, I kind of cheated...


Yes, a hard-core baker would have used their OWN pumpkin. But with everything going on lately, that just wasn't going to happen. So I took my canned pumpkin, my bread and spice mix, eggs, oil, and water, and mixed it all together.

I let it bake for 45 min and woila!



The whole time it was baking, my house was filled with the smell of pumpkin spice. I LOVE IT! So unfortunately, I only had one loaf pan and the mixture I had was enough for two. However, since I only had one, I just kind of eye-balled what I thought half of the mixture would be for the first loaf. Unfortunately, I was a little off and the first bread loaf came out slightly bigger than the second. Just slightly. But both tasted really yummy. It just meant that the first loaf took longer to bake! :-)



Eventually I will find a recipe for a COMPLETELY homemade (pumpkin and all!) pumpkin bread recipe. And when I find a good one, I will be sure to share!

  2. Yum! I need to try this recipe. I bought the girls pumpkin bread at the Farmer's Market and they both love it.
