Easy Chicken Burritos

There are so many variations of chicken burritos. This one I love because it's super easy. Jon made these awesome burritos for dinner on Valentine's Day and they were excellent! Keep in mind you can pretty much do anything you want with this recipe. You can use different ingredients, and you can use different amounts. Like I have said before, I usually don't go by a recipe when I cook so this is just to give you an idea. It all depends on what you like. You can put the rice and beans inside of your burrito (we actually forgot to get the rice for this meal), or you can have them on the side.

Easy Chicken Burritos

Ingredients:
1 package flour tortillas (we used the jumbo sized tortillas from Costco)
3-4 cups shredded cooked chicken ( we used cut-up chicken breast)
1 (1 1/4 oz) envelope taco seasoning mix
1 cup diced tomato
1 red bell pepper, sliced
2 avocados, sliced
1 cup onion, sliced
1 cup shredded cheddar cheese
1 can pinto or black beans
3 cups prepared Spanish rice
Sour cream
Taco sauce or salsa

Preparation:
In a medium skillet, combine chicken, water and taco seasoning. Bring to a boil; reduce heat. Add onion and bell peppers. Cover and simmer about 15 minutes or until vegetables are soft, stirring occasionally. Heat tortillas according to package directions. To assemble the burritos, spoon chicken mixture onto tortillas.

Add the remaining ingredients onto your burrito. Fold bottom edge of each tortilla up and over so it covers filling. Fold opposite sides of tortilla in until they meet. Roll up from the bottom. Serve with rice and beans and extra taco sauce or salsa, if desired.
