Pineapple Barbecue Chicken

I've said before that I usually don't follow a recipe when I cook. Tonight, I pretty much just threw together whatever we had in the kitchen and that resulted in this great dish. Super flavorful, and my chicken was super tender! It tastes so good for being so easy to make. Basically, your oven is doing all of the work! Ha! I've put together a recipe as best as I could for all of you.

Pineapple Barbecue Chicken
Prep: 10 min. ~ Cook: 35 min. ~ Total: 45 min.

Ingredients:
4 boneless, skinless chicken breast
1 can (20-ounces) pineapple chunks in heavy syrup
1 bottle (28-ounces) of your favorite barbecue sauce
1 Tablespoon garlic salt
1 Tablespoon black pepper
1 Tablespoon parsley flakes
2 tablespoons olive oil

Preheat oven to 350 degrees.

Place 2 tablespoons olive oil in a heavy skillet. Sear chicken breast on each side on high heat {no more than 5 minutes per side}, then place all breasts in a casserole dish. Sprinkle on pepper, garlic salt and parsley flakes. Coat with barbecue sauce {I also added a couple of tablespoons of thick worcestershire sauce} and entire can {even the juice} of pineapple. Cover and bake for 30 minutes, then uncover and bake for 5-10 minutes more or until chicken reaches an internal temperature of 165 degrees.

    The squirrel was really big! Our backyard backs up to some partially wooded acreage so there are a ton of squirrels (and other little creatures) but this was the first time we saw one by the pool! Thanks for the compliment on our pool. I love it too!
