Chicken and Shrimp Pasta Salad



The reason the prep time is not very long for this recipe is because I had pre-cooked my chicken. If you are not feeling in the mood to cook chicken, you can buy pre-cooked chicken breast from your local supermarket. Either way, it's a super easy, quick and somewhat healthy recipe! I used to make this dish all of the time without the shrimp. I decided to add shrimp to it and it was delicious! So you can definitely vary this recipe to your liking. You can do it with just the chicken or just the shrimp, depending on your preference. 


Chicken and Shrimp Pasta Salad
Prep: 15 min. ~ Cook: 20 min. ~ Total: 25 min. ~ Serves: about 6


Ingredients:
1 bottle (15 ounces) Italian dressing
1 lb. rotini pasta 
2 cups chicken breast, cooked, cubed
1 1/2 cups shrimp, cooked, peeled, deveined, cut into 1/2-in. pieces
1 cup sharp cheddar cheese, cut into 1/4-in. cubes
1/2 cup pimientos or finely chopped red bell pepper
1/4 cup olives (optional)


In a large pot, cook pasta to al dente.  Drain, and place pasta in a large serving bowl. Let cool slightly.


Add remaining ingredients and toss, making sure to cover all ingredients in the dressing. 


Serve and enjoy! See? I told you it was easy!
