Pumpkin Pancakes with Apple Cider Syrup



These are by far the moistest, fluffiest, softest pancakes I have ever had! Paired with the apple cider syrup, I was in heaven during breakfast! Nothing puts you more in the spirit of autumn than pumpkin dishes. There are so many different things you can try with pumpkin. Things that taste amazing. But don't take my word for it. Start with these!





Pumpkin Pancakes with Apple Cider Syrup
Prep: 30 min. ~ Cook: 10 min. ~ Total: 40 min. ~ Serves: Makes about 7-10 pancakes, depending on size

Ingredients:
For Pancakes:
1 cup all-purpose flour
2 Tbsp. sugar
1/2 tsp. salt
2 tsp. baking powder
1/2 tsp cinnamon
1 cup milk
2 eggs, separated
1/2 cup cooked or canned pumpkin
2 Tbsp vegetable oil

For syrup:
3/4 cup apple cider or apple juice
1/2 cup packed brown sugar
2 Tbsp butter or margarine
1/2 cup corn syrup {maple syrup can be substituted but may change flavor}
1/2 tsp. pumpkin pie spice
Dash of vanilla extract

For syrup, combine all ingredients in a saucepan. Bring to a boil, stirring frequently. Reduce heat and simmer for 25 minutes, stirring occasionally. Syrup should start to thicken. Remove from heat and let stand for 25 minutes before serving. 

For pancakes, combine all of the dry ingredients in a bowl. In a separate bowl, mix together the milk, egg yolks, pumpkin, and oil. Stir wet ingredients into the dry ingredients, just until blended. In a separate bowl, whisk egg whites 'til medium peaks form. Gently fold into pancake batter.

Using a ladle, pour about 1/4 cup of batter into hot pan or griddle. Cook 'til bubbles form on the outer edge and tops of pancakes, then flip over. Cook 'til golden brown. Serve with warmed syrup.
