Pan-Seared Salmon with Mango Salsa

Salmon Mango Salsa


I get a lot of people asking me what the difference is between pan-searing and sauteing. When you saute, generally you use a little bit more oil or butter and you cook on medium to high heat. With pan-searing, you use less oil (don't use butter) on high heat for a shorter period of time. When you pan-sear, the goal is to get that carmelized crust on the outside of the meat or fish. This means that you don't want to be moving whatever you are cooking around. Usually you cook one side, turn once, and cook the remainder of the time on the other side so the natural sugars can carmelize. When you are pan-searing, you will notice that the side you are cooking will start to break apart and it will start to brown. That's exactly what you want! I use both methods of cooking, since they are both great. Just depends on what you are making.

Pan-Seared Salmon with Mango Salsa
Prep: 20 min. ~ Cook: 10 min. ~ Total: 30 min. ~ Serves: 4


Ingredients:
For Salsa:
1 ripe mango, peeled, pitted, and diced
1/2 seedless cucumber, peeled, and diced
1 small red bell pepper, chopped
1/2 small red onion, chopped
3 Tbsp. fresh cilantro, chopped
Juice of 2 limes
Salt and pepper to taste
*For mango salsa with a little more kick, add 2 tsp. minced jalapeno chile

For salmon:
4 salmon fillets, boneless, skinless
2 Tbsp. olive oil
Juice of 1 lime
Salt and pepper to taste

Combine all ingredients for mango salsa in a bowl. Cover and set aside until ready to serve.

Heat olive oil on medium heat for about 2 minutes. Place salmon fillets in pan and turn heat up to high. Season with salt and pepper. Cook for 3 minutes then turn over. Cook other side for 5 minutes or until desired doneness. Salmon is cooked when it flakes apart.

Transfer salmon to serving plate. Sprinkle with lime juice and top with mango salsa.
