Pesto Bow Tie Pasta with Turkey and Brown Butter Apples

8 ounces Farfalle pasta
4 oz. basil pesto
8 cherry tomatoes, halved
2 medium apples, peeled, cored, and thinly sliced
4 oz. boneless roasted turkey breast, sliced (about same size as apple slices)
4 Tbsp butter or margarine
Pinch of powdered ginger
Salt and pepper to taste
Cook pasta according to package directions. Drain and set aside.
Place butter in saucepan and simmer until it becomes bubbly and starts browning. Stir in a pinch of powdered ginger. Add apples and cook 'til just tender, stirring occasionally to prevent burning.
Combine cooked pasta, tomatoes, apples, and turkey. Stir in pesto, making sure everything is coated. Top with shredded mozzarella if desired.
