This recipe was adapted from another recipe found here. It's a really easy chowder that anyone can make. I really enjoyed it because it is a hearty soup but doesn't feel too heavy. The taste of the salmon goes great with the sweet potato.
Salmon, Sweet Potato, and Broccoli Chowder
Prep: 20 min. ~ Cook: 23 min. ~ Total: 43 min. ~ Serves: 4-5
4 Tbsp. butter
1 onion, chopped
3 cups chicken broth
2 cups whole milk
1/4 cup all-purpose flour
1 tsp fresh thyme leaves
1 bay leaf
1 large sweet potato, peeled and diced
1 small broccoli stalk, roughly cut into pieces
1lb. boneless, skinless salmon fillet, cut into 1-inch pieces
Salt and fresh ground black pepper
Place butter in a large, heavy saucepan over medium heat. Add onion and cook 'til softened, about 5 minutes.
Stir in flour, 'til smooth. Whisk in broth and milk. Add the sweet potato, thyme, bay leaf, 1 tsp. salt, and 1/2 tsp. pepper.
Bring to a boil, reduce heat, and simmer until potatoes are just tender, about 10 minutes. Add the salmon and broccoli and simmer 'til salmon is cooked through and broccoli is tender, about 8 minutes more. Remove bay leaf before serving.
